When I revisited this cocktail after many years (almost a decade) since first posting in on Cake ‘n Knife, I realized that I do not make it often enough every single summer!
Anything cucumber screams refreshing to me, and a cucumber margarita is exactly that – ultimate refreshment with just the right amount of booze. The summer may be coming to a close but I plan to celebrate every sun-filled moment, cucumber margarita in hand.
I’ve been needing something to reinvigorate my love for summer, and this cocktail is exactly that.
Now, you might be skeptical about cucumber in a margarita… Trust me, I was skeptical too. The first time I tried it was at a work retreat in the mountains at my coworker’s insistence. I took a sip, fully prepared to politely nod and then discreetly pour it in a plant. But I was SO wrong. It was like someone took the classic margarita and gave it a spa day!
This drink is seriously refreshing. It’s got that tequila kick you love, but the cucumber adds a cool, crisp flavor!

ingredients
cucumber. Fresh garden cucumbers are all you need!
tequila. I prefer using a blanco or silver tequila. It’s lighter flavor is best for pairing with the cucumber flavor. My personal favorites are a mid-range price point like El Jimador or Dobel. You can use something more top shelf if you prefer like Patron.
lime juice. Fresh lime juice is a MUST for this cocktail! It will give you the best flavor.
agave. This is the preferred sweetener for the flavor, but you can also use simple syrup if preferred.

To make the cucumber juice, you can use a high-speed blender like a Vitamix or a food processor.
For the cocktail, you will need a jigger, cocktail shaker, and cocktail strainer.
You can use your favorite cocktail glasses or margarita glasses!
here’s how to make a cucumber martini
make cucumber juice
Place cucumber chunks in the bowl of a food processor. Puree until the cucumbers have broken down into a smooth mixture.
Strain the cucumber mixture over a medium bowl. Clean the strainer. Get another medium bowl and strain the cucumber juice again. Strain one last time (cleaning the strainer in between each time you strain) into a clean glass. The mixture should be clear by the third time you strain!

Add cucumber juice, tequila, lime juice, and agave to a shaker filled with ice.
Strain into a glass filled with ice. Garnish with a slice of cucumber and a mint sprig.
variations
make it spicy! Add a few slices of jalapeno to the blender with the cucumber chunks to make a spicy cucumber juice.
make it fruity! Add a few strawberries to the cucumber chunks in the blender to make a fruity cucumber juice. You can also use watermelon, blueberries, raspberries, and mango.

what kind of cucumbers are best for this cocktail?
Garden cucumbers are the best for this cocktail as they yield the most cucumber juice possible. You can also use hothouse cucumber, English cucumbers, or even mini cucumbers, but note that you might have to use more of these varieties as they will not yield as much juice.
can I buy cucumber juice instead of making it?
Yes, you can buy fresh cucumber juice if you prefer. Make sure it is not sweetened, or the cocktail will come out too sweet.
how can I make this a big batch cocktail?
To make this cocktail a big batch, you can easily increase the servings noted in the recipe card below and the ingredient amounts will automatically be adjusted! If you are making it for more than 6 people, you can switch to prepping the drink in a large pitcher filled halfway with ice. Stir the drink really well and add some cucumber slices for a pretty look!

- Combine 4 oz cucumber juice, tequila, lime juice, and agave in a shaker filled with ice.
- Strain into a glass filled with ice. Garnish with a slice of cucumber.
