When you want to please the adults and the kiddos all in one meal, try my simple Pesto Grilled Cheese recipe! The kid-friendly version is easy and straightforward, while the adult-friendly version has more complex flavors to compliment the cheese and pesto combo. Serves 2 of each type.

We all grew up with grilled cheese, I’m guessing. At least, it was a staple in our house! Of course, at this point in life, I still wasn’t a soup person.
Therefore the grilled cheese had to be G-O-O-D.
This is what actually drives my desire to make fancy grilled cheese sandwiches whenever the mood strikes me.
Thankfully now (and much to the happiness of the Man), I enjoy said grilled cheese sandwiches with a side of soup most of the time. However, the star in my eyes is always the SANDWICH.

To celebrate this year, I am bringing you something totally new that will satisfy both the adults and the kids in the family.
Now that I am a mom (eeeek still crazy to believe, you know?!), I am thinking ahead to when I will be cooking real food for Babycakes. As I cook dinner nowadays, my mind can’t help but wander to days when I will have him try out all these new foods to see what he likes.
Of course, I know that as a kid, there will be some pickiness in my future. So I am starting to think of recipes that can both satisfy the adults, but can be easily modified to feed any picky eaters in the family!
This pesto grilled cheese starts with simple ingredients, and is then elevated with more complex flavors to get your taste buds dancing.
As many of you know, I am a big Sprouts Farmers Market fan. They have all the ingredients I need to make these elevated grilled cheese sandwiches, and to make them EASILY.
First we start with their sliced sourdough bread which I absolutely LOVE the flavor of. It’s perfect for grilled cheese because it toasts up just right and is still chewy. Then you layer on their sliced provolone and shredded mozzarella cheese to give you an extra cheesy center.
The best addition to the sammies is Sprouts’ Creamy Basil Pesto! It has all the pesto flavor you love, but it’s creamy so it’s an even better pairing for the gooey melty cheese.

this recipe’s must-haves
I got everything you need for these sandwiches at my local Sprouts Farmers Market, and you can too! I highly recommend the Sprouts Sourdough Bread, sliced provolone, and shredded mozzarella. Also, don’t forget the Creamy Basil Pesto!
You will need a skillet to toast the grilled cheese sandwiches, and that’s about it! Everything else can be easily assembled by hand/silverware in your kitchen.
here’s how to make pesto grilled cheese!
Assemble
Butter one side of each of the slices of bread. Then spread the opposite sides with pesto.
For the kids’ version, top them with provolone and mozzarella cheese.
For the adults’ version, top them with both cheeses, sun-dried tomato, red onion slices, and drizzle with the balsamic vinegar.
Toast
Toast the sandwiches in a large skillet over medium-low heat until the cheese is melted and the bread is golden brown. This should take about 2 to 3 minutes per side.

Pesto Grilled Cheese Two Ways!
ingredients
- 4 slices Sprouts Sourdough Sliced Bread
- 2 to 3 Tbsp unsalted butter room temperature
- 4 to 5 tsp Sprouts Creamy Basil Pesto
- 4 Sprouts Provolone Cheese Slices
- 4 oz Sprouts Shredded Mozzarella Cheese
- 1/4 cup Sprouts Sun Dried Tomatoes drained
- 1/4 cup sliced red onion
- 1 Tbsp balsamic vinegar
- 4 slices Sprouts Sourdough Sliced Bread
- 2 to 3 Tbsp unsalted butter room temperature
- 4 to 5 tsp Sprouts Creamy Basil Pesto
- 4 Sprouts Provolone Cheese Slices
- 4 oz Sprouts Shredded Mozzarella Cheese
instructions
- For the Adults: Butter one side of all four slices of bread. On the other four sides, spread 1 tsp creamy basil pesto each.
- Top two slices with even amounts of sun-dried tomatoes and red onion.
- Top with two slices of provolone and even amounts of shredded mozzarella cheese. Drizzle with balsamic and top with the other slices of bread.
