The number one candy out of all the Easter candies is mini chocolate eggs. Particularly the ones from Cadbury with the thin candy shell and rich milk chocolate inside.
We go through bags of them every single year, without a single regret. So much better than the jelly beans that I used to find in hidden Easter eggs around my grandma’s backyard.
Of course, I love using them in other recipes like mini eggs cookies. This year, I decided to add them to brownies and holy wow, this is my new favorite way to use them in a recipe!
The base of this recipe is the perfect brownie. It’s fudgy and moist, with incredible chocolate flavor. Even if you just used the brownie recipe without the topping, everyone would be going nuts over this recipe.
Of course those crunchy candies are what turn this dessert into an Easter-themed treat that everyone will get excited about! The little bit of crunch to pair with the soft brownies underneath makes them decadent, rich, and indulgent.
Whenever we makes these brownies, there are never any leftover so I’ve started making a double batch to make sure I have leftovers to enjoy later! These candies only come out once a year, so I have to make the most of it. You know what I mean?
With simple ingredients, this delicious brownie recipe is the perfect Easter dessert.
ingredients
butter. Use unsalted butter in this recipe. If you decide to use salted butter, be sure to omit the salt called for in the recipe. Make sure to melt the butter and let it cool slightly before using in this recipe.
sugars. You will need both light brown sugar and granulated sugar for this recipe.
egg. Large eggs are best for baking!
vanilla. We make our own homemade vanilla extract – it’s super easy! If you need a recommendation for a store bought option, try this Madagascar Bourbon Pure Vanilla Extract.
salt. All you need is fine kosher salt.
espresso powder. The espresso powder brings out the chocolate flavor in this recipe, giving it extra depth.
flour. You can use all purpose flour or a gluten-free 1:1 ratio flour.
cocoa powder. Using unsweetened Dutch cocoa powder always yields the best brownies. It is what makes them really rich and fudgy.
mini egg candies. Our personal favorite will forever and always be Cadbury Mini Eggs! They have the best flavor, hands down.
this recipe’s must-haves
You only need a large mixing bowl from a set of mixing bowls to make the batter. Use a whisk and a wooden spoon to stir together the batter.
For baking, all you need is an 8×8-inch baking pan. Don’t forget the parchment paper to line the baking pan for easy removal!
here’s how to make Easter brownies
prepare baking pan
Line an 8×8-inch with parchment paper. Make sure that the edges are long enough to hang over the sides of the pan. This will make it super easy to remove from the pan after baking! Set aside.
Pro Tip: spray the pan with cooking spray before adding the parchment paper! This helps the parchment stick and makes it a bit easier for you.
make the batter
Whisk together melted butter, light brown sugar, and granulated sugar until combined. Add in eggs and vanilla to the egg mixture, whisking until combined.
Add in salt, espresso powder, flour and cocoa powder. Stir until just combined.
assemble and bake
Pour the brownie batter into the prepared baking dish. Sprinkle the top with crushed egg candies in an even layer on top.
Bake for 30 to 40 minutes at 350˚F. The brownies are done when a toothpick inserted in the center comes out with wet crumbs.
Remove from oven to cool completely before slicing.
tips for success
slice when cooled. Make sure that you wait to slice the brownies until they are cooled! Otherwise they will be too soft and gooey to cut into squares.
add chocolate chips. Love extra chocolate? Add in a 1/2 cup of your favorite type of chocolate chips to the batter before adding it to the prepared baking pan! White chocolate chips are a particular favorite of ours.
add nuts. Just like chocolate chips, you can add in 1/2 cup of your favorite chopped nuts to the batter! Walnuts and pecans are ideal for this recipe.

do I have to crush up the mini eggs before using them?
While you don’t have to crush the eggs up for the topping, it makes them a lot easier to eat! I like to add a handful of whole eggs on top for decoration, but crushing the mini eggs makes them a better topping for the fudgy brownies.
how do I prevent my brownies from coming out dry?
Make sure that you do not over bake them! When you take the brownies out, there should still be some wet crumbs sticking to a toothpick when it is inserted in the middle and removed. You don’t want dry crumbs as this means those brownies will be dry.
can I make these brownies ahead of time?
Of course you can! These brownies will last up to 3 days at room temperature when stored in an airtight container.
can I use a 9×9-inch baking pan instead?
You can use a 9×9-inch baking pan for this recipe! Note that the brownies will be much thinner than what you see in the pictures in this post. In addition, make sure to reduce the baking time to 20 to 30 minutes as they will bake faster.

how to store
Store. Cool the mini egg brownies to room temperature before storing in an airtight container. They will last up to 3 days on the countertop at room temperature.
Reheat. Reheat the brownies in the microwave for a few seconds to get that “fresh out of the oven” warmth!
Freeze. Cool to room temperature before adding to a freezer bag or airtight container. Brownies can be frozen for up to 1 month.
Thaw. You can thaw the brownies overnight at room temperature.
