These fluffy strawberry waffles are going to change your morning breakfast or brunch routine! They are crispy and golden on the outside, while also being tender and soft on the inside. Plus this recipe is insanely easy to make and loaded with fresh, ripe strawberries.
We love to make this recipe because it’s not just reserved for special occasions. They are easy enough to make on a weekday morning when you are all bleary-eyed and barely functional. However, they are totally elegant enough to whip up for weekend brunches!
There’s nothing better than biting into a warm, crisp waffle full of strawberry flavor. It screams summer and easily pairs with your favorite toppings from whipped cream to maple syrup and more.
ingredients
flour. You can use either all-purpose flour or gluten-free 1:1 ratio flour.
sugar. All you need is granulated sugar for this recipe!
baking powder. This is what makes the waffles so light and fluffy on the inside!
salt. Be sure to use fine kosher salt so it incorporates evenly into the recipe.
cinnamon. This gives the batter a lovely warming scent of cinnamon when combined with the fresh strawberries.
butter. Use unsalted butter for this recipe. If you prefer to use salted butter, be sure to omit the salt called for in the recipe.
milk. We recommend using whole milk for this recipe.
eggs. Fresh large eggs are best for the waffle batter.
vanilla. Using a high-quality vanilla extract will always yield the best results. We make our own homemade vanilla extract. For a store recommendation, we really like Madagascar Bourbon Pure Vanilla Extract from Nielsen Massey.
strawberries. Fresh strawberries are a must for the recipe! They will yield the best flavor. You can also use roasted strawberries!
this recipe’s must-haves
Have a cutting board and chef’s knife handy to chop up the strawberries.
You will need a set of mixing bowls to make the batter for the waffles, as well as a whisk and wooden spoon.
To cook the waffles, grab your waffle iron!
here’s how to make strawberry waffles
combine dry ingredients
Whisk together flour, sugar, baking powder, salt, and ground cinnamon in a large bowl until well-combined. Set aside.
combine wet ingredients
Place butter and a few tablespoons of milk in a small microwave-safe bowl. Microwave until the butter is melted, then stir to combine.
In a separate medium bowl, add remaing milk and melted butter mixture, whisking to combine. Add in the eggs and vanilla. Whisk well to combine.
make batter
Pour the wet ingredients into the bowl with the dry ingredients, whisking until just combined. It is ok if there are a few lumps in the batter. Fold in the chopped strawberries until just combined. Do not over mix.
cook waffles
Let the waffle batter sit at room temperature until the waffle iron preheats. Add waffle mix to your hot waffle iron. Cook according to your waffle iron’s instructions.
Serve warm with your favorite toppings.
tips and tricks
do not over mix. If you over mix the batter, you will end up with tough waffles instead of ones that are light and fluffy.
preheat the waffle maker. Take the time to preheat the waffle maker before using it! Otherwise the exterior will not crisp up the right way.
cool the waffles the right way. Don’t stack up the hot waffles after cooking them! Cool them in a single layer so the heat and steam don’t make them soft. You can also keep them warm in the oven as you cook the remaining waffles.
variations
add chocolate chips. Stir in 1/2 cup mini chocolate chips to make these chocolate strawberry waffles!
add in more berries. If you love berries in your waffles, you can add a sprinkle of blueberries to the top of the batter in the waffle iron just before closing it.

should waffle batter be thicker or thinner?
Waffle batter should be on the thicker side! This batter should be thicker than pancake batter, but thinner than muffin batter.
how do you get waffles to stay crispy?
As you make the waffles, don’t let the made waffles get soggy by keeping then in a warm oven. Set the oven temperature to 200˚F and place the waffles on a baking sheet as you make them in the oven. If your waffles turn out not as crispy as you like, you can get them crispier in the oven by setting the temperature higher at 300˚F.
can I make these waffles gluten-free?
Yes, you can make these waffles gluten-free by using gluten free 1:1 ratio flour.

You can serve these waffles with whatever you like to top your waffles with! Here are some of our favorites:

- Strawberry coulis (a simple 4-ingredient sauce with tons of strawberry flavor!)

how to store
Store. If you have leftovers, they can be stored in the fridge for up to 3 to 4 days if wrapped tightly in plastic wrap.
Reheat. Reheat the waffles by popping the into the toaster oven for 1 to 2 minutes to reheat. You can also reheat them in the microwave for about 30 seconds, but they will be lose those crispy edges.
Freeze. Wrap the waffles individually in plastic wrap, then store in an airtight container or a resealable freezer-safe bag. They will keep in the freezer for up to 2 months.
Thaw. Thaw frozen waffles in the microwave for 30 seconds, then reheat in the toaster oven the rest of the way so you get those crisp edges and soft center.
