Make the homemade seasoning, then smoke for 2 1/2 hours, meaty side up.

Wrap each rack in foil, drizzling each with some apple cider honey sauce. Smoke for another hour.

Increase heat to High and remove racks from foil. Place them on the grill and cook for another 15 minutes, basting with BBQ sauce.
