ingredients
pork loin. you will need one AdapTable Meals Hickory Smoked Bacon Wrapped Boneless Pork Loin Filet for this recipe! However, this recipe is also super easy to scale up, so if you are feeding a crowd, grab some more pork loins from AdapTable Meals. The smoky bacon and tender pork is a killer combination in terms of flavor! You don’t have to worry about adding anything to the pork loin – just cook it straight out of the package and in the air fryer.
cranberries. Fresh cranberries are best for this recipe! They are in season now through the holidays, so it’s the perfect time to make the most of their seasonal freshness. Do not use dried cranberries for this recipe.
red wine. You can use whatever red wine you would like for this recipe, but I recommend a Cabernet Sauvignon or a Shiraz for the red wine cranberries.
honey. Use your favorite honey, or even agave is a great sweetener if you prefer that. Maple syrup also works. orange. You will need the zest of a fresh orange for this recipe.
this recipe’s must haves
You only need a few tools to make this recipe! For the roasted cranberries, I like to use a square glass baking dish. You will also need a wooden spoon or a spatula to stir everything together.
For the pork loin, I use my Instant Pot air fryer, but you can use whatever air fryer you prefer! You will also need a pair of tongs to get the pork loin in and out of the air fryer easily.
Finally, you will need a chef’s knife and cutting board for slicing the air fryer pork loin.
here’s how to make air fryer bacon wrapped pork loin
make roasted cranberries
In a square 9×9-inch baking dish, add cranberries, wine, honey, and orange zest. Stir to combine. Roast in the oven for 30 to 35 minutes at 375˚F. Remove from the oven and stir well. Set aside until ready to serve.
air fry
Lightly spray air fryer insert with cooking spray. Preheat the air fryer at 400˚F. Once preheated, add pork loin seam-side down to the insert. Cook for 20 minutes, until 145˚F to 150˚F in the center when a meat thermometer is inserted. This is for a medium-rare cook, so if you want it to cook longer, see below for doneness temperatures.
rest
Rest pork loin for 5 minutes before slicing and serving with roasted red wine cranberries.
tips for success
check the temp. Make sure to check the temperature of the meat before removing it from the air fryer. The temperature in the center should be 145˚F to 150˚F for medium-rare.
preheat the air fryer. For the best results, be sure to preheat your air fryer! Most already have a preheat setting, but if not, simply set it to the temperature you need for the recipes for 5 minutes before using it.
how long do I cook a pork loin in the air fryer?
Pork loin cooked in the air fryer takes about 20 minutes at 400˚F to cook to medium-rare, depending on the size of your pork loin and preference for doneness. I’ve listed the temperatures for pork doneness below for easy reference. If you want yours cooked past medium-rare, just add about 3 to 5 minutes for each additional doneness step past medium-rare.
Medium Rare – 145˚F to 150˚F
Medium – 150˚F to 155˚F
Medium Well – 155˚F to 160˚F
Well (not recommended as the pork will dry out) – 160˚F+
can I make this for a crowd?
While the recipe listed below feeds 4, this recipe can easily be scaled up to feed 8 or more! Most air fryers will accommodate two AdapTable Meals Hickory Smoked Bacon Wrapped Boneless Pork Loin Filets. You don’t need to change the cooking time if you are cooking two instead of one!
If you would like to cook more than 2 total, you will need to work in batches. When I do this, I simply keep the cooked ones warm in the oven at about 175˚F so it doesn’t overcook but stays warm. You can also simply cover them in foil to keep them warm until ready to serve.

- 2 cups fresh cranberries
- 1/3 cup red wine
- 1 Tbsp honey
- Zest of 1 orange
- Cooking spray
- 1 AdapTable Meals Hickory Smoked Bacon Wrapped Boneless Pork Loin Filet
- Garnish: freshly chopped parsley
instructions
- Preheat the oven to 375˚F. Add everything for the roasted red wine cranberries to a 9×9-inch baking dish. Stir to combine.
- Bake cranberries for 30 to 35 minutes, until cranberries are soft and liquid has evaporated. It should be a nice chutney at this point! Set aside until ready to serve.
- While the cranberries are baking, spray the insert of your air fryer with cooking spray.
- Place the AdapTable Meals Hickory Smoked Bacon Wrapped Boneless Pork Loin Filet in the air fry, seam side down.
- Air fry the pork for 20 minutes at 400˚F. The pork is done when it registers 145˚F to 150˚F (medium rare*) on a meat thermometer inserted into the center.
- Remove pork loin from the air fryer and let rest for 5 minutes before slicing and serving.
