Remember how much fun birthdays were as a child?
There were pony rides and balloons and face painting and games and, most importantly, CAKE. I remember on multiple occasions running around someone’s backyard, frosting smeared all over my face, giggling my face off because I was high on sugar and for some reason running was the best feeling in the world. I am sure the part my mom fondly remembers is how easily I passed out on the car ride home…
This past weekend was a certain very special someone’s birthday celebration so I decided to shower him with as much food as I could make, including his favorite cake (which I can tell you tasted delicious, even if it was a mess). And then, to top it all off, I turned cake batter into cookies.
Because who doesn’t do that for a birthday? If you haven’t, you are slacking…
Somehow these cookies lasted a few days (I thought they would have been devoured in moments but I did go a little overboard with baking and cooking this weekend…) and they are still melt-in-your-mouth soft with a hint of sprinkle-crunch. How is this possible?? It’s like the cookie fairies shone down on me and guided me to this ever-so wonderful recipe that made my hubby fall in love with me that much more. At least I like to think that’s what happened…
Oh and the best thing to do with these cookies that make you smile because they are colorful and delicious? Make an ice cream sandwich. YUM.
ingredients
- 1 box vanilla cake mix 18.25 oz
- 1 tsp baking powder
- 2 eggs
- 1/2 cup vegetable oil
- 1/2 tsp vanilla extract
- 1 cup color sprinkles
instructions
- Preheat oven to 350°. In a large bowl, mix together the cake mix and baking powder. In a small bowl, mix together the eggs, oil and vanilla. Add the egg mixture to the cake mixture and stir to combine. Stir in the sprinkles. Drop by spoonfuls onto a cookie sheet or silpat.
- Bake for 10 minutes. Allow to cool for 5 minutes on cookie sheet.

Gah! Sprinkles in a cookie!? Yes, please! They look amazing and the recipe is getting stashed away for the next time I actually have time to bake…hopefully soon!
