You know those nights when you want something fun to sip but aren’t feeling the alcohol? This ginger beer mocktail has become my absolute favorite. It’s got that spicy-sweet kick from the ginger beer that makes it feel festive, without any of the next-day regrets.
Start with spicy ginger beer as your base, then make it your own. Add a splash of tart cranberry juice, muddle in fresh mint, or float some juicy blackberries on top. The combinations are endless and you can easily make it fit your mood, any season throughout the year.
This is the kind of drink that makes everyone feel included at the party. It’s got enough complexity to stand up to any craft cocktail, but stays deliciously alcohol-free. Plus, the non-alcoholic drink comes together in just minutes with ingredients you can easily keep on hand.
ingredients
lime. You will need the juice from one half of a lime per moscow mule mocktail. Fresh lime juice yields the best flavor!
simple syrup. Learn how to make simple syrup and you’ll never have to buy it from the grocery store or liquor store again.
100% juice. If you choose to use juice, make sure it is 100% juice for the best flavor.
ginger beer. Did you know that ginger beer isn’t actually beer? It’s really a non-alcoholic beverage that’s bubbly and has a kick of ginger. We like brands that are spicier with a big kick of ginger like fever-tree ginger beer. If you prefer less spice, there are other brands out there like bundaberg ginger beer.
soda water. Make it at home if you have a SodaStream, or buy it at the store!

here’s how to make a ginger beer mocktail
assemble
Tip: If you are using fresh herbs or fresh fruit, be sure to muddle it with the lime juice before adding the ice.
Fill a copper mug with ice. Pour in simple syrup and juice, stirring to combine.
Top with ginger beer and soda water. Stir it briefly.
garnish
Garnish with a lime wheel or fresh mint sprig and serve.
tips and tricks
use lots of ice. Ice cubes or crushed ice work well for this cocktail. Use a copper mug to keep the drink cold so the ice doesn’t melt.
adjust to taste. This mocktail is so easy to customize! Taste it before you finish it off with your favorite garnish. You can add more simple syrup to make it sweeter. Use more lime juice to make it tart. Add a splash of soda water to tone down the spice of the ginger beer.
variations
add juice. While juice is an optional ingredient, you can incorporate to change up the flavor profile of this mocktail easily. You can use pineapple juice, cranberry juice, pineapple juice, pomegranate juice, grapefruit juice, cherry juice, fresh orange juice, blood orange juice, or apple cider (not juice).
use fresh herbs. Fresh herbs like mint, rosemary, cilantro or thai basil bring an herbaceous quality to the drink. Add them to the bottom of the glass and muddle them with the lime juice before adding ice and assembling the rest of the recipe.
use fresh fruit. Fresh fruit can add to the fruit juice you add! Use berries, pineapple chunks, or pitted cherries for even more flavor. Again, be sure to muddle the fruit with the lime juice before adding in the ice and continuing with the rest of the recipe.
add even more spice. Muddle a few slices of jalapeno with the lime juice for a spicy ginger beer mocktail!

There are so many options out there, but our personal favorite is fever-tree ginger beer. If you prefer less spice, there are other brands out you can use, like bundaberg ginger beer.

There are so many juices that can be incorporated into this mocktail! Pineapple, cranberry, pineapple, pomegranate, cherry, orange, blood orange, and even apple cider (not juice) work wonderfully with the ginger and lime in the recipe.

To make this mocktail a little less spicy, simply add in more soda water. This will help the spiciness of the drink cool down. You can also incorporate other juices to balance out the flavor.
