Welcome to the full tutorial on how to grill the best new york strip steak of your life! After years of trial and error, I’ve collected all of the best tips and tricks to achieve the best results every single time.
All you need is a high-quality steak and your grill to make this recipe come to life. Cooking this steak usually takes about 12 to 14 minutes for the perfect medium rare steak! You get a lovely sear on the outside, with a tender, pink interior that is worthy of applause.

Grilling a new york strip steak is our favorite way to achieve the most tender and flavorful steak possible. Here’s a few reasons why this method works for a new york strip steak on the grill:
- Taking the steak out the sit for at least an hour at room temperature before cooking is extremely important to make this steak extra tender.
- Using a marinade and/or a steak seasoning imparts even more flavor, allowing you to customize the steaks each time you make them!
- By letting the meat rest, you ensure that the juices do not seep out, leaving you with a dry steak.

steak. We are working with the perfect New York strip steak today! This steak is also called New York steak, Omaha Strip, or strip loin steak. It’s a steak that’s marbled with fat, giving you a tender and richer texture and flavor. This is one of the most popular cuts for grilling! Note that you can also use this method with ribeye, sirloin, or even flank steak.
marinade (optional). If you want to add even more flavor to the steak, try a 3-ingredient steak marinade. It will keep the steak tender and add even more flavor to compliment the beefy taste of this cut of meat.
steak dry rub (optional). Make your own homemade steak rub or use this Traeger beef dry rub for extra flavor. A good combination of spices can really elevate the cut of beef. Of course, there’s no need for this, you can always just use kosher salt and black pepper!

There are tons of tools to help ensure your steak comes out perfectly every time.
The most important tool in my opinion is a meat thermometer. It’s the best way to make sure that you are not overcooking the steaks at any moment.
When it comes to grills, you can use any type of grill. If you are in the market for a new grill, I highly recommend a Traeger grill. I like to use Traeger grill signature pellets, but you can use any flavor you want.
Finally, investing in a butcher knife to slice the meat is a must to get the perfect slices you want.
here’s how to grill a new york strip steak
remove from fridge first
Whether or not you did a marinade for the steaks, be sure to remove the steaks from the fridge for at least 1 hour. You can let them rest for up to 90 minutes total, before putting the steaks on the grill. This step helps the steaks stay tender because you are not cooking the meat as long and risking overcooking.
season well
Season the new york strip steaks with salt or your favorite steak rub. Make sure that you season all sides of the steak! You’ll need about 3/4 teaspoon of salt or a steak rub per 1 pound steak.
preheat the grill
Preheat the grill to medium high heat. You will want to make sure you leave enough time to preheat the grill for at least 10 minutes, no matter what type of grill you have.
Be sure to grease the grill grate with olive oil before you set the steaks on them! No one wants a steak that sticks to the grill.

Once the grill is nice and hot, add the steaks to the grill, placing them side by side at a bit of an angle (this is the first step to getting those perfect crosshatch grill marks!). Close the lid and cook the steaks until they reach your desired doneness.
For rare, that will be about 12 minutes until it reaches an internal temperature of 120˚F (it will cook the extra 5 degrees while it rests off the grill!). Medium rare will take about 14 minutes until it reaches 130˚F. If you need more temperatures, I have listed them further down in the post for reference.
The key is to remove the steaks when they are 5 degrees under the ideal temperature to allow them time to come to temp as they rest.
Want to get those crosshatch marks from the grill? Turn the steaks every 2 minutes, turning them 90 degrees as you flip them.
let the steak rest
Remove the steaks from the grill to a cutting board for slicing. Let rest for at least 5 to 10 minutes to allow the juices to redistribute and let the steaks come to temperature. Slice and serve as desired.
is a new york strip steak good for grilling?
New York strip steaks are excellent for grilling! With rich marbling, these thick steaks are tender and lean. Therefore you end up with an extra juicy steak, fresh off the grill.
what if my steaks are thinner than 1-inch?
If your steaks are on the thinner side, you will need to adjust the cook time to ensure you do not overcook them. We recommend not using steaks thinner than 1-inch as you will have to shorten the cook time, missing out on the caramelization that happens on the outside with a steak that’s thicker.
what temperature should I set my grill to?
We recommend a temperature of medium-high for the grill. This means anywhere between 375˚F and 450˚F. This temperature is ideal because it sears the steaks (you want the caramelization, remember!), while also letting the steak cook more thoroughly and slowly. We recommend keeping the heat on the higher end, closer to 450˚F for the best results.
can I use a gas grill, pellet grill, or charcoal grill?
Yes, you can use this cooking method with any type of grill! The most important thing is to know your zones and where the grill is hottest, especially with a charcoal grill. Simply aim to match the temperatures mentioned in the recipe as best you can.
why do I need to let the steaks rest before slicing them?
Letting the steaks rest is one of the most important steps when cooking steak. If you slice into a steak too soon, the juices will run out. What does that mean? Your steak will end up dry! Let the steak rest for at least 5 to 10 minutes before slicing into the steak.
what temperature is medium rare for steak?
This New York strip steak cooks on the grill for about 13 to 14 minutes total to achieve medium rare in the middle. This of course depends on the thickness of your steaks, so a meat thermometer is always a good tool to have handy.
For handy reference, here’s the temperatures for steak doneness:
Rare – 125˚F
Medium Rare – 135˚F
Medium – 145˚F
Medium Well – 155˚F
Well Done – 160˚F+

Store. If you have leftover steak, it can be stored in an airtight container in the refrigerator for up to 4 days.
Reheat. To reheat the steak, do so either on the grill or in the oven. All you need is about 5 minutes on medium-high heat to reheat on the grill. For the oven, set to 325˚F and place on a baking sheet to reheat for about 5 minutes, until warmed through.

- Remove the steaks from the fridge for at least 1 hour (up to 90 minutes) to let rest at room temperature.
- Preheat the grill to medium high heat (approximately 450˚F is ideal). Carefully oil the grill rack with olive oil.
- Season steaks generously on all sides with salt and pepper, or your preferred steak rub.
- Place steaks on the grill at a slight angle. Close the lid and turn the steaks every 2 minutes or so, turning the steaks 90 degrees each time you flip them. this is what will help you achieve crosshatch grill marks. Cook until steaks are cooked to your preferred doneness (about 12 minutes for rare, 14 minutes for medium rare, and 16 minutes for medium, depending on the thickness of your steaks).
- Remove steaks from the grill to a cutting board. Let rest for at least 5 minutes and up to 10 minutes before slicing.
- Slice and serve as desired.
