olive oil. Use extra virgin olive oil for the best flavor in the marinade. You can also use avocado oil, if preferred.
garlic. Minced garlic is all you need for the recipe! We usually buy our own in a jar to make life easier. You can also peel and mince whole garlic cloves yourself, if preferred.
lime juice. Fresh lime juice is best to use! You can also use store bought juice, but fresh citrus juice generally tastes better because it is less tart.
cilantro. Be sure to use fresh cilantro leaves and tender stems.
spices. You will need chili powder, smoked paprika, dried oregano, ground cumin, salt, and black pepper for this marinade.

whisk together
Add olive oil, garlic, fresh lime juice, chili powder, smoked paprika, dried oregano, ground cumin, salt, pepper, and cilantro in a medium bowl until well combined.

Place chicken into a resealable plastic bag. Pour the marinade in and press out the air in the bag before sealing it. Place in the refrigerator for up to 24 hours, at least 4 hours, until ready to use. Remove the chicken from the marinade and cook chicken as desired until it reaches an internal temperature of 165˚F.

make sure your spices are fresh. Check your spices to make sure they are fresh! Spices expire in 6 months, so if it’s been longer than that (or you can’t remember how long it’s been), pick up new ones!
use fresh cilantro. Fresh cilantro is better than dried cilantro for flavor!
how many hours should you marinate chicken?
Marinate the chicken for at least 4 hours to get the best flavor! You could also marinate the chicken up to 24 hours. Do not marinate the chicken longer than that, because the flavors will become overpowering and the chicken won’t taste as good.
what chicken cuts can I use with this marinade?
You can use this marinade with chicken breasts, chicken thighs, or even a whole chicken. Any piece of the bird will work with this marinade!
what if cilantro tastes like soap to me?
If cilantro tastes like soap to you, don’t worry! You can simply remove the cilantro from the marinade recipe. There’s still plenty of seasoning in the marinade to give you that Mexican flavor, even with out the fresh cilantro. Do what works best for your taste buds!

ingredients
- 1/4 cup olive oil
- 3 cloves garlic minced
- 3 Tbsp fresh lime juice
- 2 tsp chili powder
- 2 tsp smoked paprika
- 2 tsp dried oregano
- 1 tsp ground cumin
- 1 tsp salt
- 1 tsp black pepper
- 1/8 cup chopped cilantro
- 2 lbs chicken breasts* cutlets, thighs, drumsticks, etc
instructions
- Whisk together ingredients for the marinade in a medium bowl.
- Add chicken to a resealable bag. Pour in the marinade. Press all of the air out of the bag and seal. Move the chicken around to coat all over.
- Marinate the chicken for at least 4 hours, up to 24 hours.
- Remove chicken from the marinade. Cook as desired until cooked through and the internal temperature reaches 165˚F.
