For me, I love when those punches are full of fruity flavor with a touch of sweetness and mint. That’s where this killer colorful combination comes in for your next party!

Spring and summer are some of my favorite months for partying with friends and family. The chill in the air is gone, and everyone is doing everything they can to be outside with the people they love.

That’s why you need a punch that will cool people off while also tickling their tastebuds with bubbly flavor.

Where does a lot of that flavor come from in this punch? It comes from fresh fruit juice and Sparkling Ice Black Raspberry!

I have been a fan of Sparkling Ice products for a longgggg time. Well really, I am a fan of any sparkling water—especially when it has naturally sourced flavors and colors like this brand does. It’s one of those treats that I give myself every afternoon as a little pick-me-up to get through to the end of the day.

There is always variety with these sparkling waters; I mean, they have 16 different flavors after all. However, you can also feel extra good about drinking them because they have zero sugar, zero calories, vitamins, antioxidants, and just the right amount of fizz.

The flavor is there in every sip of Sparkling Ice, but it isn’t like drinking a soda that is too sweet. In fact, if you are trying to give up soda, it’s a fantastic bridge to back off that habit.

ingredients

Mint Simple Syrup
  • 1/2 cup sugar
  • 1/2 cup water
  • 10 mint leaves
Punch
  • 4 17oz Sparkling Ice Black Raspberry bottles, chilled
  • 2 liters club soda chilled
  • 2 cups fresh pineapple juice chilled
  • 1 quart raspberry sherbet
Garnish
  • Raspberries
  • Pineapple wedges
  • Mint leaves

instructions

  • Scoop the sherbet into 6 to 8 round scoops. Place on a baking dish that’s been lined with plastic wrap. Place in the freezer until ready to serve.
  • To make the simple syrup, add all ingredients to a small saucepan over high heat. Bring to a boil and remove from heat. Cover and let steep for 15 minutes.
  • Strain syrup into a small bowl and place in the freezer to chill for about 15 minutes.
  • When ready to serve, add Sparkling Ice® Black Raspberry, club soda, pineapple juice, and mint simple syrup to a punch bowl. Fill with ice.
  • Top with scoops of sherbet, fresh raspberries, fresh pineapple wedges, and mint leaves.
  • Serve in glasses filled with ice.

I love rhubarb season – you should see the size of the rhubarb stalks at the store this past week. They are HUGE.

So I am planning on making all my favorite rhubarb recipes from now until those pretty pink stalks are no longer available on the store shelves!

I am finally out of my haze from this week. I don’t know why I was stuck in it, but I’m feeling like a normal human being again (well, as normal as I can be!).

Personally, I believe it’s all because of the rhubarb hitting the shelves. It screams spring to me and that’s all I need in the world right now!

Rhubarb and strawberry is such a classic combination for desserts, so why not throw that sweet, fruity flavor in a cocktail?

A classic gin fizz is the ideal cocktail for the merging of these flavors. The subtle juniper flavor in the gin compliments the flavor of the fruit-infused homemade strawberry rhubarb simple syrup.

Then you get a little zing of lemon to bring some acidic notes in, brightening up the entire drink. 

This is definitely my new favorite cocktail and will remain my favorite until I run out of this homemade simple syrup.

No one has to know that it was insanely easy to make, after all.

Note: you can totally use frozen strawberries and/or frozen rhubarb to make the simple syrup for this cocktail if required! I know it can take a while for some places to get rhubarb when the season hits, and that it also sells out really quickly. If you do use frozen fruit, be sure to thaw it and then strain it before adding to the simple syrup recipe!

If you need a standard shaker for your home bar, I love to refer people to this Boston cocktail shaker. It works for any cocktail that needs to be shaken. 

You’ll need a cocktail strainer to pour this cocktail. Don’t worry, even when you strain the cocktail, you’ll still get the lovely foam top. You can always reach back into the shaker for extra foam with a bar spoon if you so wish!

Brown Butter Gnocchi With Asparagus & Peas is a warm and fresh skillet of pure joy. The crisp, green vegetables with soft and pillowy gnocchi are tossed with brown butter and crispy prosciutto. It’s the ideal spring meal that you won’t want to stop making over and over again!

This is my “welcome to spring!” dinner 🙂

Spring is in full swing here, even though the leaves on the trees in our backyard aren’t sprouting just yet. The only sign of spring being here in Colorado is the tulips slowing pushing their way through the dirt and the warm weather.

I’m unbelievably ecstatic about it because I have missed the warm weather (as you’ve heard me go on and on and on about these past several months). 

Finally I can pop out back after I finish up with the dishes, lounge on a chair while listening to an audiobook, and sip on a glass of crisp white wine as the dogs run around.

It’s one of those little joys that I cherish during the warmer months, just like the additional hours of sunlight and the sunroof in my car. 

This brown butter gnocchi skillet is my new favorite way to indulge in gnocchi. 

It’s full of all the spring things that I absolutely love!

From the asparagus and peas, to lemon and parmesan, each bowl of this gnocchi is a mixture of happiness. 

The crispy prosciutto provides an added texture for the pillowy gnocchi.

Finally, there’s the brown butter sauce that brings it all together with richness and nutty notes. 

GAH, I could literally eat this pasta every single night. There’s just so many elements in the skillet, but they all pair together in the absolute best way.

It’s SO stupidly simple to make, so you can whip it up on a weeknight. However, it makes such a big “wowza” impact, you can also serve it up at your next dinner party!

At least, that is totally my plan… 😉

This Recipe’s Must-Haves

You will definitely need a cast iron skillet to make this recipe shine. I love it because it serves as a single dish to cook in and serve out of, while also looking great! If you want a cheaper skillet, you can opt for this Lodge cast iron skillet that is also durable and long lasting.

I love my clongs (AKA click-lock tongs) because they have this little stand that lets you set them on the counter without making your counter all messy! It’s ideal for tossing pasta dishes like this, as well as serving. 

Make sure that you have a sturdy chef’s knife and cutting board to cut up the prosciutto and asparagus. It’s all about getting those even knife cuts after all (at least that’s what Gordon Ramsey would say).

Gnocchi, asparagus, and peas are tossed with a rich brown butter sauce, lemon, and crispy prosciutto for the ultimate spring dinner!

  • 1 package 16 oz potato gnocchi
  • 4 oz prosciutto cut into thin strips
  • 1/4 cup plus 2 Tbsp butter
  • 2 tsp finely chopped garlic
  • 1 Tbsp chopped fresh thyme leaves
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 cups sweet peas fresh or frozen
  • 1 lb asparagus cut into 1” lengths
  • 1 tsp fresh lemon juice
  • 1/2 cup freshly grated Parmesan cheese

instructions

  • Heat a 12-inch cast iron skillet over medium-high heat. Add prosciutto to the skillet and cook until crispy, stirring occasionally, about 2 minutes.
  • Remove prosciutto from skillet and set aside.
  • Add 1/4 cup butter to the same skillet. Let over medium heat and continue to cook for about 2 to 3 minutes, stirring constantly.
  • Once the butter is brown and smells nutty, remove from heat to a small bowl.
  • Add remaining butter and melt. Add gnocchi and cook over medium heat in the skillet until browned, about 5 minutes.
  • Stir in garlic and thyme leaves, cooking until fragrant, about 1 minute.
  • Stir in salt, pepper, peas, and asparagus, along with half of the brown butter. Cook until vegetables are bright green and cooked through. This will take about 2 to 3 minutes.
  • Stir in remaining brown butter and lemon juice, cooking until fragrant, about 1 minute.
  • Stir in 1/4 cup parmesan cheese and prosciutto.
  • Serve immediately with remaining parmesan cheese.

  • 1 Tbsp finely grated lemon zest
  • 1/4 tsp fine salt
  • 2 sheets frozen puff pastry thawed
  • 4 Tbsp unsalted butter room temp

instructions

  • Preheat oven to 400˚F. Grease a 12-cup muffin tin with cooking spray or butter.
  • In a small bowl, stir together 2 Tbsp granulated sugar, brown sugar, lemon zest, and salt.
  • Sprinkle a clean, flat work surface with 1 Tbsp granulated sugar. Place one sheet of puff pastry on top.
  • Spread the puff pastry with 2 Tbsp softened butter. Sprinkle with half of the lemon sugar.
  • Use a rolling pin to lightly roll the puff pastry evenly. This will help the sugar stick on both sides!
  • Tightly roll up the puff pastry from its longest side.
  • Repeat steps 3 through 6 with the other sheet of puff pastry.
  • Cut each long into 6 even rounds.
  • Place each round into a muffin cup, cut side up.
  • Bake for 20 to 25 minutes until golden brown and cooked through. Carefully remove buns to a wire rack to cool slightly.
  • Add remaining granulated sugar to a small bowl. Toss each bun in the sugar to coat.
  • Serve warm.

It’s the beginnings of FAT TUESDAY my friends!

I don’t care if you have never celebrated Mardi Gras before, or if you go balls to the wall every single year for the carnival celebrations. This cocktail absolutely MUST be added to your libations menu for this evening.

If I could choose a classic cocktail to sip on every spring, it would forever and always be the daiquiri. The base recipe is light and crisp. With just a hint of tang, it’ll make your taste buds say “giddy up!”

It also just so happens to be an easy cocktail to modify and make your own. Just in time for Mardi Gras!

Everyone I know is OBSESSING over king cake right now. Heck, just being in Vegas last week, everything seemed to be king cake themed. From doughnuts to desserts, and so much more, the flavors of cinnamon tastiness are pure heaven to indulge in this time of year.

That’s why I couldn’t leave you without one more recipe to make the most of the Fat Tuesday flavors. They will quickly be a distant memory until next year, after all!

This daiquiri is so stinking easy to make. You are going to fall head-over-heels in love with the king cake simple syrup that is the main focus of this cocktail.

The simple syrup provides the sweet element to the drink. However, it has the additional flavors of cinnamon and lemon, it elevates the cocktail to a new level.

You won’t want to stop drinking these, but be sure to dip slowly. They are pretty easy to get tipsy off of if you aren’t careful!

King Cake Daiquiri

ingredients

sugar. In this recipe, you will make a custom mardi gras simple syrup! Therefore you will need granulated sugar and water to start the base of the syrup.

cinnamon sticks. Whole cinnamon sticks are best to make the simple syrup. Do not use ground cinnamon as this will make the syrup grainy.

pecans. The nuttiness of the pecans gives such great flavor! Use chopped, halved, or whole.

lemon juice. Fresh lemon juice is always best!

lime juice. Again, use fresh lime juice if you can. It just tastes better.

rum. Use white rum for this cocktail. Spiced rum is not the appropriate spirit for a daiquiri and will throw off the balance of the cocktail.

this recipe’s must haves

I personally love using a Boston cocktail shaker. It’s a classic shape and I use it for so many different cocktails!

For a fancy coupe glass that is durable and elegant, these coupe glasses are my faves! They are the ones you see me use in the photos.

All you need to round out this recipe is a cocktail strainer!

King Cake Daiquiri

here’s how to make a king cake daiquiri

make simple syrup

Add water, sugar, cinnamon sticks, pecans, and lemon juice to a saucepan over medium-high heat. Bring to a boil and stir until the sugar dissolves.

Remove from heat, cover and let steep for 30 minutes. Strain and cool to room temperature before using.

I love to get festive with the rim of this cocktail! To recreate the look you see here, you will need green, yellow, and purple sanding sugars.

Rub the edge of your cocktail glass(es) with a wedge of lime. Roll the coupe glass in the three different sugars for a mardi gras look!

In a shaker, add lime juice, flavored simple syrup, rum, and water for the daiquiri. Fill with ice and shake well.

Strain into the prepared cocktail glass and serve.

tips for success

let the simple syrup cool. Let the homemade simple syrup cool completely before using it in the cocktail! This will help you avoid the ice melting down when it is shaken, as this will water down the drink.

use fresh citrus juices. Use fresh lemon and lime juice for the syrup and the cocktail! Fresh just tastes better.

what is a daiquiri?

The original daiquiri is not the frozen daiquiri you might think of. When it was first invented (we are told that was probably in Cuba in the 1800s), the classic daiquiri was made with white rum, citrus juice, and a sweetener. Simple, classic, and refreshing (like this grapefruit daiquiri or joey’s daiquiri – my play on a Hemingway daiquiri).

Frozen daiquiris, on the other hand, are mixed cocktails that are blended with ice. This strawberry basil frozen daiquiri is a winner if you are looking for a frozen option!

what is king cake?

King cake, a blend of coffee cake and a cinnamon roll, is also known as a three kings cake. Traditionally there is a small bean or plastic baby hidden inside (whoever finds it wins a prize). The flavors you tend to find in king cake are pecan, cinnamon, and a touch of lemon (which is exactly what the simple syrup is made with!).

KING CAKE SIMPLE SYRUP
  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 2 cinnamon sticks
  • 2 Tbsp chopped pecans
  • 1/2 oz lemon juice
DAIQUIRI
  • 2/3 oz fresh lime juice
  • 3/4 oz king cake syrup
  • 2 oz rum
  • 1 oz water
RIM
  • Green yellow, and purple sanding sugars

  • In a small saucepan over high heat, combine ingredients for the king cake simple syrup. Bring to a boil, stirring until the sugar dissolves.
  • Remove pan from heat, cover and let steep for 30 minutes. Strain and cool to room temperature before using.
  • Rub the edge of a coupe glass with a wedge of lime. Rim the edge in green, yellow, and purple sanding sugars.
  • Combine lime juice, king cake simple syrup, rum, and water for the daiquiri in a shaker filled with ice. Shake well and strain into rimmed glass.
  • Serve immediately.

Big Batch Option: The Simple Syrup recipe makes enough to use in 10 cocktails with a little leftover. For 10 cocktails, here's the measurements on the other ingredients: 7/8 cup lemon juice, 1 cup king cake simple syrup, 2 cups white rum, 1 cup water. Instead of shaking in a cocktail strainer, mix it together in a cocktail mixing glass or pitcher filled halfway with ice. Strain and chill in the fridge until ready to serve!
