Honestly I hadn’t heard about the drink until a random cocktail recipe site had an article on it and I was like, hmmmmm that sounds interesting… Maybe I should try it!

Friends, this is one of the best discoveries I’ve ever made.

I remember I tried tomato confit in a local restaurant just a month or two ago. It is such a simple concept, so I didn’t think I was going to flip out over like I did.

Essentially, tomato confit is cooking tomatoes slowly in extra virgin olive oil with some fresh herbs and cloves of garlic. The large tomatoes start to burst while remaining plump, helping them to retain all the richness of the oil and all the smooth, savory flavors of the other ingredients.

Now that we are back and settled from the wedding, honeymoon, and a week visiting family, I am getting excited about having people over to celebrate the end of summer.
