One of my personal dreams is to have my life together enough to constantly have a rotation of aiolis in my refrigerator at all times.
Roasted garlic aioli, chipotle aioli, etc. All of these sauces are such powerhouses of flavor, and they can be used in so many different ways.
Not only are they amazing to dip fries into, they are perfect for adding a creamy element to sandwiches or even as a base for your favorite avocado toast.
The versatility is endless, and the roasted garlic flavor is absolutely irresistible. This sauce is creamy, slightly sweet, tangy, and savory. It’s well worth the effort of waiting for the garlic to roast to make this aioli extra flavorful. This is the ultimate winner of all the condiments!

what is aioli?
Traditionally, aioli is made from a combination of olive oil and garlic. The olive oil is emulsified to make a creamy sauce with the garlic. Of course, many variations out there add raw egg yolk to bolster up the creaminess of the aioli. Aioli is originally from Mediterranean cuisine.
If you are in the United States, you will be more familiar with aioli as essentially a flavored mayonnaise (which is how I made this recipe). While both a traditional aioli and mayonnaise are both a type of emulsion, they are a bit different. Just to give you all the information (and for the purists out there who want to yell at me for making an aioli with mayonnaise as a shortcut, haha).
ingredients
garlic. Use two garlic heads for this recipe! It might seem like a lot, but it’s such a lovely flavor. Make sure the garlic heads are not squishy and are in tact without any cracks. If you don’t want to use two heads of garlic, you can use just one.
oil. I like to use extra virgin olive oil, but you can also use avocado oil, grapeseed oil, or vegetable oil.
mayonnaise. You can use your favorite mayonnaise brand! I like to use low-fat, but it’s totally up to you for which you prefer. If you want to make this recipe vegan, you can use vegan mayo. While we use store-bought mayo, you can also use homemade mayo.
lemon juice. Fresh lemon juice will give you the best flavor!
Worcestershire sauce. You can also use soy sauce or liquid aminos if you want to make this recipe vegetarian or vegan.
cayenne. This is an optional ingredient, but the subtle hint of heat really elevates the flavor of the sauce.
salt. Use kosher fine salt to season this aioli to taste!
this recipe’s must-haves
The primary tools you need for this recipe is a chef’s knife and a cutting board to prep the garlic for the oven.
Other than that, you only need a big piece aluminum foil and a bowl to mix the aioli in with a spoon.
here’s how to make roasted garlic aioli
roast garlic
Trim the tops off each head of garlic so all of cloves are exposed. Drizzle with 1 teaspoon olive oil each, then sprinkle with salt and pepper.
Wrap the whole heads of garlic individually in aluminum foil. You can place them in a small baking dish or directly on the oven rack.
Bake for 50 to 60 minutes at 400˚F until soft and golden brown. Unwrap each whole head of garlic when cool enough to handle. It will take about 5 to 10 minutes for them to cool down. You can always pop them in the refrigerator to speed up the cool down process!
mash garlic
Squeeze out the garlic cloves into a bowl. Mash with a fork until smooth. If there are any hard pieces that aren’t breaking down, just remove and discard them.
mix
Add mayonnaise, lemon juice, Worcestershire sauce, and cayenne (if using) to the roasted garlic. Stir well to combine.
Refrigerator for at least 30 minutes before using. The longer it sits the better it will taste!
tips and variations
let it chill. Let the aioli chill in the refrigerator for 30 minutes for the flavors to meld. It’ll help the aioli taste even better!
use the air fryer! Short on time? Use the air fryer to make air fryer roasted garlic in so much less time than using the stove.
adjust the seasoning. You can add a little heat by adding in some cayenne pepper! Alternatively, adjust the Worcestershire sauce or lemon juice to vary the flavor as you prefer.

can I use roasted garlic aioli instead of mayonnaise?
Yes! This roasted garlic aioli is a wonderful replacement for plain mayonnaise on sandwiches, in wraps, and so much more. The creaminess and roasted garlic flavor really packs a punch!
do I have to roast the garlic?
You can make this aioli recipe with raw garlic, but I think that the roasted garlic is what makes this aioli stand out. Plus the slight sweetness of the roasted garlic is just so delicious.
If you do choose to use raw garlic, I recommend using only 2 to 3 cloves because raw garlic is much more pungent.

how to use roasted garlic aioli
There are SO many ways to use this roasted garlic aioli. First off, it’s the best dipping sauce. Creamy and savory, you can use it as a dip for french fries, onion rings, potato cheese balls, kettle chips, and more.
It’s also delicious drizzled on a side of crispy oven roasted potatoes and onions, or even over roasted broccoli or asparagus.
Another idea is to use this sauce with your favorite proteins like baked salmon, grilled chicken, and more. It just so happens to be awesome with sandwiches and burgers. Any of your favorite sandwiches will work whether they are meaty or packed with veggies.
The options are endless. Anything that goes with roasted garlic is going to go with this sauce.
how to store
Store. Store in an airtight container in the refrigerator. The aioli will last for up to 2 weeks!
