Did you get into baking sourdough over the last handful of years? This was a big thing during COVID in 2020, but it has still gained steam over time.
I finally hopped on the bandwagon last year, but then hopped off as time went on. Turns out, it’s hard to keep up with feeding sourdough starters and to keep up with baking bread every weekend when you have a toddler running around all the time.
Maybe one day my homemade bread goals will be a reality….
Let’s talk about this sourdough garlic toast! If you’ve got a sourdough loaf and 10 minutes, that’s all you need to make this recipe. The tangy sourdough gets crispy golden edges while staying perfectly chewy inside – and when you slather it with homemade garlic herb butter, it’s over-the-top good.
Just slather slices of your favorite loaf of sourdough bread with homemade garlic herb butter (store-bought works too, but homemade is next level), then let your broiler do its magic. It’s almost too easy to be as good as it is.
It’s become my go-to perfect side dish for everything from Sunday pasta to weeknight soup. And between us? Sometimes I make a few extra pieces just to snack on while cooking…

sourdough bread. Use your favorite loaf of sourdough, whether bought or homemade with your own sourdough starter. If you do make it yourself, make sure to let the loaf cool to room temperature (about 1 to 2 hours) before slicing and using in this recipe. You can even try different flavors of sourdough to change up the toast!
garlic herb butter. Making garlic herb butter is super simple! Just soften some butter and mix it up with fresh herbs and minced garlic. If you don’t want to make the full recipe for garlic herb butter, I’ve added a smaller portion version of the butter mixture recipe beneath the recipe card below.

To make this recipe, you will need a half sheet baking pan and a silicone mat (or a piece of parchment paper).
You will also need a bread knife to slice your loaf of sourdough!
here’s how to make sourdough garlic toast

Spread the sourdough bread slices with equal amounts of garlic herb butter. Place on a baking sheet lined with a silicone mat or parchment paper, buttered side facing up.

Place in the oven set to broil. Broil for 3 to 5 minutes, until golden brown and toasted. Keep an eye on your oven! It can quickly go from toasted to burnt under the broiler.
Serve immediately.
tips and tricks
do not use freshly baked sourdough. You need to let the bread cool completely before using it in this recipe, if you are making it yourself. If you cut into it too soon, it will not be fully cooked and you’ll release the heat and steam in the center.
use a toaster oven. Don’t want to use the broiler? Use a toaster oven set to 450˚F. Toast the slices for about 3 to 5 minutes, until golden brown. Keep an eye on them so they don’t burn!
use fresh herbs. Fresh herbs are what make the garlic herb butter taste so good!

does sourdough make good toast?
Sourdough is my favorite bread to make toast out of! Whether it’s this garlic toast, avocado toast, toast slathered with butter… The thick slices of crusty bread are not only flavorful, but they hold up to lots of ingredients so you can really pile on whatever you want.
do I have to make the garlic herb butter?
If you don’t want to make the full garlic herb butter recipe, you can scale it down by mixing the following together in a small bowl:
- 3 Tablespoon salted softened butter (if using unsalted butter, add a pinch of sea salt)
- 1 clove garlic, minced (or 1/4 teaspoon garlic powder)
- 1 teaspoon chopped fresh basil
- 1 teaspoon chopped fresh parsley (or thyme, oregano, rosemary)
Don’t have fresh herbs? Just mix together butter and fresh garlic for garlic butter.
You can also skip making garlic herb butter and just add salted butter to the toast. This will be more of a plain toast, so you’ll lose the fresh herb and garlic flavor. It’s worth taking a few minutes to make the garlic herb butter!
how long does the garlic herb butter last?
If you don’t use all the garlic herb butter, you can store it in the refrigerator in an airtight container for up to 1 week.
can I use another type of bread for this sourdough garlic toast?
You can use another crusty artisanal bread for this recipe, if you prefer. A nice Italian country loaf does well, in our experience.

what to serve with garlic sourdough bread
The most obvious pairing choice for this garlic bread is pasta! A quick and easy pasta napolitana or penne pomodoro are two classic recipes we love to serve on weeknights. If you want something meatier, try hearty Instant Pot short rib ragu or Instant Pot bolognese.
how to store
Store. Have leftover garlic bread? Store them in an airtight container, wrap in plastic wrap or place in a resealable bag. They will keep for about 1 day on the countertop at room temperature.
Reheat. Reheat from frozen in the oven or toaster oven on a baking tray at 400˚F for about 1 to 2 minutes, until warmed through. Pro Tip: Make a pizza out of a slice by topping with marinara sauce, mozzarella cheese, and parmesan cheese until melted and gooey.
Freeze. Wrap each slice of bread in a layer of plastic wrap, making sure it’s very tight. Place the wrapped slices in an airtight freezer container or freezer-safe resealable bag. Freeze for up to 3 months.
