I have to tell you, chicken and waffles is usually the recipe I go out to eat.
You can relate, I am sure. Making chicken and waffles at home just seems like a pretty daunting task. You have to make the perfect waffle and on top of that pressure, you need to make that crisp and juicy fried chicken.
The pressure is intense, so I just head out to my local brunch spot to satisfy the craving.
BUT, now that’s all changed.

Now, I have to be upfront with you. This isn’t your normal chicken and waffles. It’s actually a vegetarian take on chicken and waffles, so everyone can enjoy these masterpieces when you make them at home.
Don’t be intimidated, though. Yes, I am throwing two recipes at you in this post but each of them takes less than 30 minutes to make!
That’s all because of a few magical products that I picked up in the freezer section of my local Safeway store: Kellogg’s® Eggo® Homestyle Waffles and MorningStar Farms® Original Chik Patties® and MorningStar Farms® Chik’n Nuggets.
I don’t think a lot of people realize how much creativity can be found in the freezer aisle. It can seem a little difficult to take those products and turn them into anything but what they are listed as.
That’s why I am hoping these recipes will change all that for you. Staples like Eggo Waffles and MorningStar Farms Chik Patties and Chik’n Nuggets can really become a whole wealth of new recipes, just like you see here.
First up is my sweet take on chicken and waffles. This tropical flavor profile includes mango puree, homemade whipped cream, fresh pineapple and coconut. You will love how the sweet and savory flavors play off of each other in every bite, especially with a drizzle of maple syrup.
Second up is my savory take on chicken and waffles that’s turned into a sandwich. With a homemade spicy buffalo sauce coating on these patties, you get a hit of heat along with a good amount of tang from the blue cheese crumbles and honey mustard.
Sound pretty darn delicious, don’t they? And to have them in less than 30 minutes, they are downright miraculous.

Spicy Buffalo Chicken and Waffles Sandwich
Two Takes On Chicken and Waffles
ingredients
- 10 MorningStar Chik’n Nuggets
- 1 mango peeled and pitted
- 1 pineapple peeled and chopped
- 1/2 cup heavy whipping cream
- 4 Eggo Waffles
- 1/2 cup Safeway Signature Maple Syrup
- 1/4 cup unsweetened coconut flakes
- 4 MorningStar Chik Patties
- 4 Eggo Waffles
- 1/2 cup blue cheese crumbles
- 1/4 cup Safeway Signature Honey Mustard
- 1 Tbsp freshly chopped chives
- BUFFALO SAUCE
- 1/4 cup melted butter
- 1/3 cup hot sauce
- Pinch of granulated sugar
instructions
To make Tropical Chicken and Waffles:
- Bake MorningStar Chik’n Nuggetsaccording to the instructions on the packaging, making sure to flip halfway through to make them crispy.
- In the last 5 minutes of baking, add the Eggo Waffles to the oven to bake for 5 minutes or use a toaster to get them golden brown and warm.
- While the nuggets and waffles are cooking, add whipping cream to the bowl of a stand mixer. Whip on high speed until the cream reaches stiff peaks. Set aside.
- Add mango to a high powdered blender or food processor. Puree until smooth. Set aside.
- To assemble the chicken and waffles, add two waffles to each plate. Spread each waffle with ¼ of the mango puree. Pile 5 nuggets on top of the waffles.
- Drizzle with maple syrup and place a dollop of whipped cream on top. Sprinkle with coconut flakes and serve immediately.
To make Spicy Buffalo Chicken and Waffles Sandwich:
- Bake MorningStar Chik Patties according to the instructions on the packaging, making sure to flip halfway through to make them crispy.
- In the last 5 minutes of baking, add the Eggo Waffles to the oven to bake for 5 minutes or use a toaster to get them golden brown and warm.
- While the nuggets and waffles are cooking, whisk together ingredients for the sauce. Set aside.
- Once the patties are cooked, coat them one at a time with the buffalo sauce. Add one patty to the top of one waffle. Sprinkle the patty with ¼ of the blue cheese crumbles and ¼ of the chives. Top with another patty coated in sauce, followed by the same amount of blue cheese crumbles and chives. Spread another waffle with ½ of the honey mustard and top the sandwich, mustard-side down.
- Repeat this process to make the second sandwich. Serve immediately.
