ingredients

butter  all purpose flour milk mozzarella cheese eggs fine breadcrumbs vegetable oil salt

make filling

Melt butter in a saucepan, then mix in flour. Stir in milk, egg yolks, cheese, and salt. Cook until cheese has melted. Chill thoroughly. 

dredge and fry

Dredge in flour, beaten egg, and breadcrumbs. Fry until golden brown.

Let drain on a plate lined with paper towels. Top with flaky sea salt and serve warm.
