Bring a pot of water to a boil with potatoes and salt. Once boiling remove from heat and set aside.

Preheat oil in the oven in a baking dish with garlic. Add potatoes in a single layer to the pan with no overlap. Roast until golden on the bottom, then flip.

Add sliced onions on top and roast until the other side of the potatoes is golden and crispy. Remove from oven to a platter. Sprinkle with salt and chives.
