ingredients

sweet potatoes eggs brown sugar butter vanilla extract milk salt ground cinnamon flour

cook and mash

Roast sweet potatoes until fork tender, about 1 hour. When cool enough to handle, scoop out flesh and mash. Let cool.

make filling

Beat together mashed sweet potatoes with eggs, butter, sugar, vanilla, and milk until very smooth. 

assemble & bake

Make the pecan streusel topping and spread evenly on top. Bake for 40 minutes until golden brown.
